Frozen custard is a premier ice cream. Glaciers Café makes their frozen custard and was rated by the Minneapolis Star and Tribune in the top five ice cream places in the Twin Cities.
The primary difference between frozen custard and ice cream is the amount of air infusion. Ice cream is made with 50% -80% air while frozen custard is made with 30% air. This makes frozen custard a smoother, denser and better tasting product. Frozen custard also has a small amount of egg.
Another major difference is the amount of fat in the product. Glaciers Café makes frozen custard with 10% fat while premium ice cream has 15 to 16% fat.
